Identified the crash. The crash happens on drop tank detach during combat, and only during combat. As soon as the shooting stops they can detach fine. I don't know why. The drop tanks aren't clipped inside the craft weirdly, they aren't colliding with anything.
Edit: Tried moving the drop tanks to the rear of the craft to see if the crash was related to the fuel tanks colliding with the radiators or the dodging AI trying to maneuver around them. No luck, still crashed.

I think I've seen similar crash with multi-droptank ship being hit by a complex (continuous transverse rod payload) kinetic impactor.
