When designing a coilgun, the tooltip for number of turns and number of layers say something along the lines of "more turns/layers increase the magnetic field" However, it seems that coilguns fire projectiles faster the less turns/layers they have. Wouldn't having a more powerful magnetic field (more turns/layers) increase the launch speed, not the opposite?

Depends. A stronger magnetic field can make the projectile "stick" more to the barrel, due to the fact that objects are attracted to said magnetic field.
It also depends on what the barrel/projectile is made of, for a variety of sciency reasons I don't have time to go into.
